Awesome Vegetarian Recipes We Found And Love!


This weeks post is a little different! I am going to share some really great vegetarian and vegan recipes my husband I have found and love!

A plant-based vegetarian diet is healthier and can prevent diseases. According to the American Dietetic Association, vegetarians have a reduced risk of heart disease, obesity, colon cancer, adult-onset diabetes, osteoporosis, gout, gallstones, kidney stones, lung cancer, and breast cancer. A low fat vegetarian diet, combined with regular exercise, helps reduce blood pressure and can control, or even eliminate, non-insulin dependent diabetes.

1.  Baby Spinach Omelet


1/4 teaspoon onion powder 

1/8 teaspoon ground nutmeg 

salt and pepper to taste


Directions

1.  In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.  2. In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness. Easy enough! And delicious!


2. Mediterranean Chickpea Salad
                                                                                             

Ingredients:



½ lb
Broccoli, chopped (fresh is best; frozen is ok
½
Small-to-medium Onion, chopped, not too finely
1 tsp
Minced Fresh Ginger
3 Tbsp
Peanut Oil, a bit less if using a non-stick pan
Batter, for the seitan:
¼ cup
All-purpose Flour, rice flour, or spelt flour
2 Tbsp
Cornstarch
1 tsp
Egg Replacer, such as energ-g
¼ tsp
Baking Powder
¼ cup
Plain Unsweetened Soy Milk
1 Tbsp
Soy Sauce
For The Sauce:
¼ cup
Soy Sauce
2 Tbsp
Rice Vinegar
3 Tbsp
Vegetable Broth
3 Tbsp
Sugar or 2 1/4 Tbs. Agave Nectar
2 tsp
Cornstarch

Directions:
In a small bowl, whisk together all the sauce ingredients and set aside.
In a medium-sized bowl, whisk all the dry ingredients for the batter together, then whisk in the soy milk and soy sauce.
Tear the seitan into bite-sized pieces, then mix in with the batter.
Heat 2 Tbs. peanut oil in a wok over medium-high heat then add the battered seitan. Fry the seitan, stirring constantly and separating the individual pieces, until it's nice and brown and crispy. This may take 8-10 minutes. Then remove the seitan from the wok and set aside.
Add the remaining 1 Tbs. of oil to the wok, then add the broccoli and onion. Stir-fry for a few minutes. Don’t let the broccoli get too soft; it should still retain its color. Add the ginger and cook for another 30 seconds. Add the sauce and cook for another 3 minutes or so until it thickens. When the sauce is almost thick enough, turn the heat to low and stir in the seitan for about a minute.
Serve over rice, or over soba or udon noodles.

This is my absolute favorite meal! I serve it over some brown rice and the whole family loves it!

I am proud to be a vegetarian and have found that there is a ton of great dishes out there! I have always been a gormet food lover and found that I have not had to sacrifice my love of fine food for a life. I have never physically felt and looked better. I'm not as tired all the time  and body feels so much healthier since I stopped eating meat several years ago.

Why Use All Natural Products? What's The Harm?

Why use All Natural Products? What is the harm? What is wrong with the products I find at the local store..shampoo, lotions, ect?? Ever wonder why everyone is jumping on the natural bandwagon? Well, ZEN-ful is going to answer all these questions for you this week. The three main ingredients to stay away from and why! The three biggest are: parabens, sodium lauryl sulfate and petroleum.


#1 PARABENS:

What are parabens and why are they bad? Parabens are chemicals used as preservatives, and that’s why they are found in so many products. They are used to fight bacteria and fungus, are widely available, and cost very little to manufacture and use. Nearly all of the parabens used as preservatives are man-made and not naturally occurring. They are found in a wide range of different personal care products like shampoos, shaving gels, cosmetics, skin care products, toothpastes, and more. Why so bad?

•One study found parabens in the breast tissue of 18 out of 20 breast cancer patients studied! •Another study suggested that they may have a weak hormonal effect on the body.

•Other studies suggest they cause allergic skin reactions & interfere with the body’s endocrine system. Parabens can mimic the hormone estrogen, which is known to play a role in the development of breast cancers. Researchers found parabens in breast tumors and believe there is a relationship between parabens and tumors.


#2 Sodium Lauryl Sulfate:

What in the world is that you say? Sodium Lauryl Sulfate (SLS) which is probably the most dangerous ingredient used as a detergent in common skin and hair care products.

•SLS is used in garage floor cleaners, engine degreasers, etc. It’s very corrosive & attacks greasy surfaces!

•Studies indicate that SLS penetrates into the eyes, brain, heart, liver..showing long-term retention in the tissues.

•A study also indicated that SLS penetrated young children’s eyes and prevented them from developing properly & caused cataracts in adults!

•SLS may also cause hair loss by attacking the follicle.

•SLS cleans by corrosion. Dries skin by stripping the protective lipids from the surface so it can’t effectively regulate moisture.

•SLS reacts with many types of ingredients used in skin products and forms potentially cancer-causing nitrates!


#3 Petroleum:

We used to smear it on our ashy knees and elbows while we were kids, smather our lips with it and some would even put some life into their hair with it. So what’s the harm in it? It worked then, so why not now?
  • Since petroleum jelly attaches to your cells & can be difficult for your body to eliminate, sometimes causing buildup in various organs!
  • The oxygen and nutrients skin needs in order to release toxins and repair itself can be blocked by the “barrier” created by petroleum.

Why use All Natural Laundry Detergent?Organic laundry detergent does not contain chlorine, phosphates, or other chemicals that are dangerous to our health. Another positive for any organic laundry detergent is that none of them contain synthetic dyes or perfumes. These ingredients can be extremely harmful to people who have sensitive skin or allergies, yet they are found in most popular brands of laundry detergent. In fact, phosphates are a known water pollutant, and have caused considerable damage within our environment over the past 40 years. The use of phosphates has been hotly debated in recent years, as they are known to kill fish and plants, which throws our entire ecological system out of balance. The toxic chemicals found in laundry detergents present a danger to the environment by way of the water. But guess what? They can also damage your skin and some give off fumes that you inhale when you breathe in the just dry clothes with their synthetic fragrances. Our detergents are handmade with organic coconut oil soap, borax, washing soda and essential oil fragrance. No dyes, great for sensitive skin!


In conclusion:Our skin is a living breathing tissue that protects the body & absorbs substances that come into contact with it. If you use skincare products made with chemical preservatives, these toxic chemicals may be absorbed into your body. What you put "On" your body, is the same as what you put "In" your body!

Welcome To My ZENful World



Welcome to ZEN-ful and to the first edition of Zen-ful's
Weekly Blog!  This edition will be a "welcome to my world" sorta thing.  Let me start off by telling you a little about myself. My name is Shelley and I am 33 years old and married to a wonderful man. We have 2 great kids, a 15 year old boy and a 4 year old girl. We are located in the wonderful and scenic Pocono Mountains in PA. I started off as a Travel Agent in the hussel and bussel of the 9-5 world. After making all natural and eco friendly products at home for my family for many years, and after a lot of encouragment, I decided to take a leap and offer my products on-line! Scary as it was, I was never so happy and surprised at the reception I got! I started on Etsy.com and wow did it take off! I decided to make this my full time work and take my passion to a whole new level. And here I am!

ZEN-ful offers a wide variety of all natural home and bath products. Including soap, laundry and dishwasher detergents, room sprays, linen refreshers, sugar scrubs, lip balms, and so much more!

I am very passionate about the environment. I am a vegetarian and limit if any use of chemicals. As  Mahatma Gandhi  said:
  "You must be the change you wish to see in the world. "
I strongly believe that statement!  I hope to share a lot of great products and new ideas with you in the future.
